When I first started eating a pant-based diet, I found that there were many staples that I missed and weren’t readily available in the shops. One staple I really missed was mayo. Since then, I have been on the search for the ultimate vegan mayo recipe. During this process, I have experimented with many different ingredients, particularly when it comes to egg replacements, to try and perfect vegan mayo. So, what’s the outcome? Well, I found flaxseed to be the winner! I typically use golden flax so that it wouldn’t affect the color, but brown flax works just as well. So, here it is, my recipe for what I believe to be the perfect vegan mayo!
1 cup soy milk
2 tbsp golden ground flax (or brown)
1 tsp mustard
1-2 tbsp lemon juice/apple cider vinegar
1 tsp salt
2-3 cups neutral oil (such as grapeseed, vegetable, or canola oil).
In a high-speed blender, blend the flax, soy milk, mustard, lemon juice and salt until foamy and well combined.
Put your blender on low and slowly stream in the oil until its nice and thick. If it gets stuck, stop your blender and fold in the mix. You can add more salt and lemon juice to adjust your flavour if you like. And that’s it, as simple as that!
