Here is my super easy recipe for vegan cream cheese. Cashews are amazing at creating that wonderfully rich creaminess you would get from regular cream cheese. This recipe is so easy to make and just needs a few ingredients.
- 2 cups of soaked cashews (soak overnight or if short on time in boiling water for an hour)
- ¼ cup water from soaking the cashews
- 1 medium lemon juiced
- ½ teaspoon salt
- In a blender combine all ingredients until smooth, add more water if needed, adjust seasoning to taste.
